Salmon Two Ways

Last night: baked salmon topped with fat-free Greek yogurt, mashed potatoes w/ spinach (similar to colcannon), shaved Mediterranean salad (now dubbed mandoline salad here), and some yum multigrain/seed bread...


Earlier this week: white wine-poached salmon w/ truffle butter + capers, vegetable couscous topped with pan-seared pineapple, and pita...

I think this is Dave's doing? Is he a chef? Looks so professional. I always wanted to try salmon but have no idea how to prepare.

They were indeed Dave's doing -- I didn't lift a FINGER. I would, mind you, but in these instances he slaved over his creations alone.

Yeah, that pile of spinach potatoes wasn't (quite) as big as the photo suggests -- angle of photograph and all -- but it was twice as yum! Also, I think it has more vitamin A than traditional colcannon, which uses cabbage instead of spinach.
