Molasses Cookies

These cookies are chewy with just the slightest crisp on the outside. Your place will smell great when you bake these cookies. They are their absolute best after cooling just 5 minutes, but keep very well.

You'll need:
cookie sheet(s)
parchment paper or silicone pan liners
4.5 c bread flour (high-gluten flour)
1 T baking soda
1.25 t salt
1 T ground cinnamon
1.5 t ground cloves
1.5 t ground ginger
2 c sugar
1.5 c shortening
2 eggs
0.5 c molasses

Now do this:
Preheat oven to 375 F.
Line your first cookie sheet.
Combine flour thru ginger, set aside.
In a large bowl, cream sugar and shortening.
Add eggs.
Add molasses.
Stir in dry ingredients 'til thoroughly incorporated.
Scoop (#40) or spoon dough onto lined cookie sheet.
Bake 8-12 minutes.

Optional toppings:

  • simple milk+powdered sugar+vanilla icing, or
  • coarse sugar
